Courgette, Shallot and Goats Cheese Tart

This delightful tart combines the fresh, verdant flavour of courgettes with the sweetness of caramelised shallots and the tangy kick of goat's cheese. Set in a crispy pastry crust, it's perfect for a light lunch or as an elegant starter.

Ingredients:

  • 150 g all-purpose flour
  • 1/4 tsp salt
  • 115 g cold butter, diced
  • 2-3 tbsp cold water
  • 50g shredded mozzarella
  • 200g feta
  • 1 courgette
  • 5 shallots
  • 100g lardons
  • Salt and pepper to taste
  • Fresh rocket lettuce for garnish

 

1. Preheat the oven to 190°C

2. Prepare the pastry:

  • In a large bowl, combine flour and salt. Add the cold butter and rub into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
  • Gradually add cold water and mix until a dough forms. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • On a lightly floured surface, roll out the dough to fit a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim the edges. Prick the base with a fork.
  • Chill the pastry shell in the fridge for about 10 minutes.
  • Line the pastry with parchment paper and fill with baking beans. Bake for 15 minutes. Remove the beans and paper, and bake for another 5 minutes until just golden. Set aside.

3. Prepare the fillings

  • Cut the courgette into 1/2 cm slices.
  • Peel and quarter the shallots lengthways.
  • Cut the lardons into 1cm thick slices.
  • Break up the feta into varied sized pieces.
  • Wash the rocket by soaking in water with a few tablespoons of white wine vinegar. Leave for 10 minutes and then drain and rinse the leaves in a salad spinner.

4. Assemble:

  • Sprinkle the mozzarella cheese evenly over the puff pastry.
  • Layer the courgettes evenly over the cheesy puff pastry, overlapping each courgette by half.
  • Place the shallots evenly over the courgette layer.
  • Spread the lardons over the tart.
  • Sprinkle the feta evenly over the tart as a final layer.
  • Salt and pepper generously.

5. Bake:

  • Place in the oven for at least 25 minutes, or more, depending on how crispy you like your pastry!

6. Garnish:

  • Remove from the oven and place a large handful of rocket over the tart.
  • Cut into 4 slices and serve with the extra rocket on the side.
